Five Ways: Vegan Mince
Ingredients:
- 100 g (3½ oz) California Walnuts
- 300 g (10½ oz) mushrooms
- 1 tbs oil
- 2 cloves garlic, crushed
- 1 tsp ground cumin
- 1 tsp chilli powder
- 1 x 400 g can chopped tomatoes
- 2 tbs tomato purée
- 1 x 400 g can red kidney beans, drained and rinsed
- 1 x 400 g can black beans, drained and rinsed
- 2 tbs chopped coriander
How to make Chilli California Walnut Mince:
- Place the walnuts in a food processor and mix to give a coarse crumb. Repeat with the mushrooms and mix into the walnuts.
- Heat the oil in a large saucepan and fry the walnut mixture and garlic for 5 minutes. Add the spices and cook for 1 minute.
- Stir in the tomatoes, tomato purée and both beans and cook gently for 10 minutes, stirring occasionally. Season and stir in the coriander.
Five ways to serve…
All these ideas serve two people.
1. Jackets
Pre-heat the oven to 200 deg. C., 400 deg. F., Gas Mark 6 and bake 2 large baking potatoes for 1-1½ hours until tender. Cut in half and top each with a portion of hot chilli mince.
2. Pasta Bake
Pre-heat the oven to 200 deg. C., 400 deg. F., Gas Mark 6. Cook 125 g (4½ oz) pasta shapes in boiling water for 11 to 12 minutes, drain. Mix in 2 portions of hot chilli mince. Transfer to a baking dish and sprinkle with 25 g (1 oz) grated vegan hard cheese, 3 tbs fresh breadcrumbs and a small handful of chopped walnuts. Bake for 15 minutes until golden.
3. Nachos
Place 185 g (6½ oz) tortilla chips on a large heatproof plate, top with 2 portions hot chilli mince. Sprinkle with 25 g (1 oz) Tex Mex flavoured grated vegan cheese and grill for 2 minutes. Top with 100 g (3½ oz) each guacamole and tomato salsa and sprinkle with extra chopped walnuts to serve.
4. Stir Fry
Heat 1 tablespoon of oil in a large frying-pan and fry 50 g (1¾ oz) sugar snaps, halved lengthways, 1 carrot, cut into matchsticks and 4 spring onions, sliced for 3 to 4 minutes. Stir in 2 portions of chilli mince and 150 g (5¼ oz) straight to wok medium noodles and heat through for 1 to 2 minutes.
5. Burritos
Spread 1 portion of hot chilli mince down the centre of 2 large tortilla wraps, top with ½ x 250 g pouch hot microwavable long grain rice and ½ sliced avocado, fold over the side and wrap up. Cut in half to serve.
